Chocolate Chip Cookie Dough Truffles
Recipe from Baked Perfection
1 cup all purpose flour
1/4 tsp salt
dash of cinnamon
1 stick butter, softened (it is ok if it's a little melted)
1/2 cup brown sugar
1/4 cup sugar
1/2 tsp vanilla extract
3/4 cup mini semi-sweet chocolate chips (can add more or less to your liking)
1-2 tablespoons water (I added about 1.5 tbsp.)
1 12oz bag of semi-sweet chocolate chips for dipping (melted)
In a medium bowl combine the flour, salt, and cinnamon. In a second larger bowl, beat together the butter, sugar, brown sugar, and vanilla extract until creamy. Slowly beat in the flour mixture until smooth. Stir in the chocolate chips. Add water if mixture is too dry to form into balls. Roll the mixture into balls and lay on cookie sheet lined with wax paper (or silicone mat) Should make approx. 20) Chill for a few hours, or freeze for 15-20 minutes until firm.
Melt chocolate chips (I melted mine in the microwave for about 1.5 minutes, but check every 30 seconds to check for melting). Dip the balls into the melted chocolate chips. Shake gently to remove the excess chocolate, and put again on the cookie sheet, place in the freezer or fridge until the chocolate is set, store in a container in the freezer or fridge.
